As a gift for Mother’s Day, I made my Mom a cake – a carrot cake, to be precise. To be a bit more exact: A carrot cake with vanilla “cream cheese” frosting, decorated with marzipan carrots.
It tasted great, no I’m not happy with the frosting. Instead of being all creamy, it still had little margarine chunks in it, even though I had beaten the frosting ingredients together for quite some time. This also made the spreading of it onto the cake rather difficult, making it quite impossible to get the sides even.
Unfortunately, I hadn’t been able to find vegan cream cheese around here. Instead, I used plain soy yoghurt and increased the amount of margarine. Maybe that could’ve been the problem concerning the texture. Any ideas? I could definitely use some advice for my next cake! 🙂
Other than that, everyone seemed to have enjoyed the cake (yes, I’m actually the critical one) and I’m really glad my Mom was happy about her gift. Hope you’ve had or are having a great Mother’s Day!

If you are still looking for vegan creme cheese, I can recommend a mail order store: http://www.alles-vegetarisch.de, they have at least two brands of vegan creeme cheeses, Tofutti and Heirler. I can recommend both. (I am not 100 % sure that Tofutti has a plain creme cheese variety), but I have tried Heirler. That should alos be also available at your local health food store (Reformhaus), if you have one.

Thanks a lot! I’ve tried Heirler as well. Found it at one Reformhaus a while ago, but then the one I usually go to doesn’t sell it. Maybe I could request for them to order some. And I’ll definitely try Tofutti as I’ve heard it’s pretty good. ^__^
